If you are keen on enjoying the experience which cognac offers then you must learn to taste it in a particular way.
Cognac is essentially a brandy that is distilled specially in the region of the same name in coastal South West France. This place is extremely near to Bordeaux. The drink must be distilled at least twice and it should be aged at least for 2 years in French oak barrels. If you want to experience the taste of the drink fully then you must know how to enjoy it.
Look: First you need to look at the
brandy. Swirl the stem glass and then check out the alcohol beads, which go down around the glass. The viscosity and the evenness of the descent will indicate the complexity of the taste and whether caramel has just been added in it for flavor. So, you should understand that coloration would tell you very less.
Use Your Nose: Keep the glass near your chin you should try to detect the light vapors and aroma of the brandy. Try to detect the aroma of spices and flowers. Fresh fruits and white flowers will tell you that it is a younger cognac. Most of the time vanilla is apparent in it but the aroma should not dominate. Nutty flavors and cinnamon should also come through. However, if you find that you are trying too hard to smell then it may assist you to associate a place, action or time with the aroma.
Feel it on your palate: You must chew the liquid a little bit and then let it fill your mouth so that it reaches all the key sensors that are present on the tongue. (The tip for sourness, saltiness and sweetness) You must look for a pleasant balance on your tongue. There should be evenness of flavors on the palate that will be extremely satisfactory.
Generally, lower grade cognac adds unpleasant levels of caramel in it to get a darker color so that it can appear older. This you will understand as you taste it and feel a distinct sweetness on your tongue tip, which is going to quickly disappear.
